  • 1/4 cup low-sodium soy sauce tamari for gluten-free
  • 2 tablespoons brown sugar or honey maple syrup for vegan
  • 2 tablespoons rice wine vinegar apple cider vinegar as a substitute
  • 1 clove minced garlic garlic powder works in a pinch
  • 1 teaspoon minced ginger fresh ginger is preferred
  • to taste sriracha sauce adjust to taste or substitute with chili paste
Wrap Filling
  • 2 cups shredded cooked chicken replace with rotisserie chicken or tofu
  • 2 cups coleslaw mix thinly sliced cabbage as substitute
  • 1 medium grated carrot omitting is optional
  • 1/4 cup chopped fresh cilantro parsley as alternative
  • 1/4 cup roasted, salted peanuts use almonds or sunflower seeds as substitutes

Method
 

Peanut Sauce Preparation
  1. In a medium bowl, whisk together the peanut butter, soy sauce, brown sugar, rice wine vinegar, minced garlic, ginger, and sriracha sauce until smooth and pourable.
Filling Preparation
  1. In a large mixing bowl, combine the shredded chicken, coleslaw mix, grated carrot, cilantro, and peanuts. Drizzle with the prepared peanut sauce and toss to coat evenly.
Wrap Assembly
  1. Warm tortillas in a damp towel in the microwave for 30 seconds. Place filling in the center, fold sides, and roll tightly.
  2. Slice wraps diagonally to showcase filling and arrange on a platter.
