Step-by-Step Instructions for Baked Feta Potatoes
  1. Preheat your oven to 400°F (200°C). While the oven warms up, prepare the baby potatoes—halve or quarter them depending on their size.
  2. In a large baking dish, combine the prepared potatoes with halved cherry tomatoes, minced garlic, olive oil, dried oregano, black pepper, and salt. Toss everything together until evenly coated.
  3. Nestle a block of feta cheese in the center of the baking dish and drizzle a little extra olive oil over the feta.
  4. Place the baking dish into the preheated oven and roast for 35-40 minutes, stirring halfway through.
  5. After removing the dish from the oven, stir the softened feta into the potato and tomato mixture and garnish with fresh basil or parsley before serving.
