Step-by-Step Instructions for Baked Feta Potatoes
  1. Preheat your oven to 400°F (200°C). Wash baby potatoes thoroughly, then halve or quarter them for even cooking.
  2. In a large baking dish, combine the prepared baby potatoes, halved cherry tomatoes, minced garlic, olive oil, dried oregano, black pepper, and a pinch of salt. Toss until well coated.
  3. Nestle a block of feta cheese into the center of the mixture. Drizzle a little olive oil over the feta.
  4. Bake in the oven for 35-40 minutes, stirring halfway through, until potatoes are golden and feta is soft.
  5. Remove from oven and stir the softened feta into the mixture. Garnish with fresh basil or parsley if desired. Serve warm or store for meal prep.
