- Preheat your oven to 400°F (200°C). Wash baby potatoes thoroughly, then halve or quarter them for even cooking.
- In a large baking dish, combine the prepared baby potatoes, halved cherry tomatoes, minced garlic, olive oil, dried oregano, black pepper, and a pinch of salt. Toss until well coated.
- Nestle a block of feta cheese into the center of the mixture. Drizzle a little olive oil over the feta.
- Bake in the oven for 35-40 minutes, stirring halfway through, until potatoes are golden and feta is soft.
