  • 1 can Salmon fresh or canned
  • 1 cup Breadcrumbs gluten-free optional
  • 1/2 cup Parmesan Cheese or nutritional yeast for dairy-free
  • 1 large Egg
  • 1/4 cup Parsley or cilantro
  • 2 cloves Minced Garlic or garlic powder
  • 2 tablespoons Lemon Juice or lime juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Creamy Avocado Sauce
  • 1 large Avocado ripe
  • 1/2 cup Greek Yogurt or dairy-free yogurt
  • 2 tablespoons Lime Juice or lemon juice
  • 1 clove Additional Minced Garlic

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine chopped salmon, breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, lemon juice, salt, and pepper. Mix gently.
  3. Roll the salmon mixture into golf ball-sized meatballs and place them on the baking sheet.
  4. Bake the meatballs for 15 to 18 minutes until firm and slightly golden.
  5. While the meatballs bake, blend ripe avocado, Greek yogurt, lime juice, and minced garlic until smooth.
  6. Remove meatballs from the oven, serve with the creamy avocado sauce for dipping.
