- Prepare your baking sheets by dusting them lightly with cornmeal.
- Spread a generous layer of BBQ sauce evenly across the flatbread crusts, leaving a half-inch border.
- Sprinkle an ample amount of shredded Colby Jack cheese over the BBQ sauce.
- Layer on the diced grilled chicken or shredded rotisserie chicken evenly over the cheese, followed by chopped bell peppers.
- Transfer the prepared flatbreads into the preheated oven or onto the pizza stone. Bake for 12 to 14 minutes until cheese is melted and edges are golden brown.
- Allow the flatbreads to cool for a couple of minutes, then garnish with thinly sliced green onions before serving.
