  • 3 medium Beets Roasted until fork-tender.
  • 1 can Chickpeas Drained.
  • 1/4 cup Tahini Rich, nutty flavor.
  • 2 cloves Garlic Fresh or roasted.
  • 2 tablespoons Lemon Juice Can be replaced with lime juice.
  • 2 tablespoons Olive Oil Extra virgin preferred.
  • 1 teaspoon Salt To taste.
For Garnish
  • 1/4 cup Pumpkin Seeds Toasted for crunch.
  • Fresh Herbs Chopped parsley or cilantro.
  • 1 teaspoon Red Pepper Flakes Optional.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Wrap whole beets in aluminum foil and roast for 45-60 minutes until fork-tender.
  2. Peel the cooled beets to reveal their vibrant color.
  3. In a blender, combine beets, chickpeas, tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth, adding water if necessary.
  4. Taste and adjust seasoning, adding more salt, lemon juice, or red pepper flakes as needed.
  5. Transfer hummus to a bowl, swirl on top, drizzle with olive oil, and sprinkle with pumpkin seeds and herbs.
  6. Cover and chill for at least 30 minutes before serving for the best flavor.
