Step‑by‑Step Instructions
  1. Soak the glass noodles in boiling water for approximately 5 minutes, then drain and rinse with cold water.
  2. Prepare the vegetables by julienning the carrots, thinly slicing the Chinese cabbage, and shredding the red cabbage. Cube the cucumber.
  3. In a mixing bowl, combine peanut butter, minced garlic, sambal oelek, agave syrup, sesame oil, rice vinegar, lime juice, and coconut milk. Whisk until smooth.
  4. Add the drained glass noodles to the bowl of vegetables and toss to combine.
