Method
 

Steps
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until browned for about 5–7 minutes. Transfer to a plate, draining excess fat.
  2. In the same skillet, reduce the heat and add minced garlic. Sauté for 1–2 minutes until fragrant.
  3. Pour in 1 cup of light cream, stirring to combine. Add 3 tablespoons of maple syrup, 1 teaspoon of thyme, and pepper. Let simmer gently for about 5 minutes.
  4. Remove the skillet from the heat and stir in ½ cup of Parmesan cheese until melted. Season with salt and pepper.
  5. In a separate pot, bring salted water to a boil. Add fresh ravioli and cook according to package instructions for 3–5 minutes.
  6. Add the drained ravioli into the skillet with the cream sauce. Toss gently to coat.
  7. Serve immediately, garnishing with additional Parmesan and fresh sage, if desired.
