Method

Step-by-Step Instructions for Buttery Grilled Potatoes
  1. Begin by scrubbing and cleaning the Yukon gold potatoes thoroughly. Cut the potatoes into ¼ inch thick rounds and set aside.
  2. Lay out two 18x12 inch pieces of heavy-duty aluminum foil. Spread cold butter evenly on each piece of foil.
  3. Place half of the sliced potatoes on the first buttered foil. Season with half of the kosher salt and black pepper, garlic, and onion. Add pats of butter on top.
  4. Layer the remaining potato slices on top. Drizzle with olive oil and create a tight seal around the layered potatoes.
  5. Preheat your grill to medium heat and place the foil packets on the grill. Cook for 15-20 minutes on one side, flip, and cook for another 10-15 minutes.
  6. Remove the packets from the grill and allow to cool. Open carefully and sprinkle with fresh herbs before serving.
