- Begin by scrubbing and cleaning the Yukon gold potatoes thoroughly. Cut the potatoes into ¼ inch thick rounds and set aside.
- Lay out two 18x12 inch pieces of heavy-duty aluminum foil. Spread cold butter evenly on each piece of foil.
- Place half of the sliced potatoes on the first buttered foil. Season with half of the kosher salt and black pepper, garlic, and onion. Add pats of butter on top.
- Layer the remaining potato slices on top. Drizzle with olive oil and create a tight seal around the layered potatoes.
- Preheat your grill to medium heat and place the foil packets on the grill. Cook for 15-20 minutes on one side, flip, and cook for another 10-15 minutes.
