  • 2 tablespoons Cajun seasoning Store-bought or homemade blend.
  • 2 cloves Garlic Fresh or powdered.
For Roasting
  • 3 tablespoons Olive oil Vegetable oil can be used.
  • 1 tablespoon Vinegar Mild vinegar of choice.
For the Base
  • 1 cup Rice Jasmine or long-grain rice recommended.
  • 2 cups Boiling water

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Prepare the vegetables and place them in the baking tray.
  3. Drizzle olive oil and vinegar over the chicken and veggies, then season with Cajun spice and garlic.
  4. Roast the chicken and vegetables in the oven for 40 minutes.
  5. Add rice and boiling water, then cover the tray with aluminum foil.
  6. Bake and steam for an additional 20 minutes.
  7. Serve and garnish with yogurt and olive oil.
