Step-by-Step Instructions
  1. In a large skillet, heat olive oil and butter over medium heat. Add sliced onions, sugar, salt, and pepper. Cook for 15-20 minutes until the onions are golden and jammy.
  2. Preheat your oven to 400°F (200°C). Roll out puff pastry on a floured surface until about 1/8 inch thick, cut into 6 rectangles, and place on a baking sheet lined with parchment paper.
  3. Spread caramelized onions evenly across each pastry rectangle, then crumble goat cheese on top.
  4. Bake the assembled tarts for 15 minutes until the pastry is golden brown and puffed up.
