Ingredients
  

Filling
  • 2 tablespoons butter unsalted
  • 1 tablespoon olive oil or any neutral oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots carrots diced
  • 2 stalks celery chopped
  • 8 ounces mushrooms sliced, cremini or button
  • 1/4 cup all-purpose flour for thickening
  • 2 cups chicken or seafood broth vegetarian option available
  • 1 cup heavy cream or half milk for lighter option
  • 1 teaspoon paprika smoked enhances flavor
  • 1 tablespoon Old Bay seasoning or similar seafood blend

  • 1 pound shrimp peeled and deveined
  • 1 cup crab meat or lobster/scallops
  • 1 cup frozen peas or fresh peas
  • 1/4 cup fresh parsley chopped, for garnish
Biscuit Topping
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder ensure it's fresh
  • 1 teaspoon garlic powder or replace with fresh garlic
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese sharp variety preferred
  • 1/2 cup butter melted
  • 3/4 cup buttermilk or milk with vinegar
  • 1/2 cup extra shredded cheddar cheese for topping, optional

Method
 

Seafood Filling Preparation
  1. In a large skillet over medium heat, melt 2 tablespoons of butter and add 1 tablespoon of olive oil. Sauté chopped onions, minced garlic, diced carrots, chopped celery, and sliced mushrooms for 5-6 minutes.
  2. Sprinkle 1/4 cup of all-purpose flour over the softened vegetables, stirring continuously for about 1-2 minutes. Gradually whisk in 2 cups of broth and 1 cup of heavy cream until smooth.
  3. Add 1 teaspoon of paprika, 1 tablespoon of Old Bay seasoning, along with salt and pepper to taste. Simmer for about 5 minutes.
  4. Gently fold in 1 pound of shrimp, 1 cup of crab meat, and 1 cup of frozen peas. Stir in fresh chopped parsley and remove from heat.
Biscuit Preparation and Assembly
  1. In a mixing bowl, combine 2 cups of flour, 1 tablespoon of baking powder, 1 teaspoon of garlic powder, and 1/2 teaspoon of salt. Fold in 1 cup of shredded cheddar cheese.
  2. Blend in 1/2 cup of melted butter and 3/4 cup of buttermilk just until combined. Preheat oven to 375°F (190°C) while greasing a 9x13 inch baking dish.
  3. Pour creamy seafood filling into the baking dish. Drop biscuit dough over filling and brush with melted butter.
  4. Bake for 25-30 minutes until the biscuit tops are golden brown and flaky. Let it cool slightly before serving.
