Seafood Filling Preparation
- In a large skillet over medium heat, melt 2 tablespoons of butter and add 1 tablespoon of olive oil. Sauté chopped onions, minced garlic, diced carrots, chopped celery, and sliced mushrooms for 5-6 minutes.
- Sprinkle 1/4 cup of all-purpose flour over the softened vegetables, stirring continuously for about 1-2 minutes. Gradually whisk in 2 cups of broth and 1 cup of heavy cream until smooth.
- Add 1 teaspoon of paprika, 1 tablespoon of Old Bay seasoning, along with salt and pepper to taste. Simmer for about 5 minutes.
- Gently fold in 1 pound of shrimp, 1 cup of crab meat, and 1 cup of frozen peas. Stir in fresh chopped parsley and remove from heat.
Biscuit Preparation and Assembly
- In a mixing bowl, combine 2 cups of flour, 1 tablespoon of baking powder, 1 teaspoon of garlic powder, and 1/2 teaspoon of salt. Fold in 1 cup of shredded cheddar cheese.
- Blend in 1/2 cup of melted butter and 3/4 cup of buttermilk just until combined. Preheat oven to 375°F (190°C) while greasing a 9x13 inch baking dish.
- Pour creamy seafood filling into the baking dish. Drop biscuit dough over filling and brush with melted butter.
- Bake for 25-30 minutes until the biscuit tops are golden brown and flaky. Let it cool slightly before serving.
