- Preheat your oven to 375ºF (190ºC).
- In a baking dish, combine the cubed zucchini, chopped green bell pepper, diced onion, and halved grape tomatoes.
- Sprinkle with Italian herb blend and garlic powder, followed by half of the mozzarella cheese. Mix gently.
- Season with salt and cracked black pepper. Drizzle olive oil over the top and toss gently.
- Bake uncovered for 20 minutes.
- Remove from oven and add remaining mozzarella cheese on top. Return to the oven for another 10 minutes or until melted and golden.
- Garnish with chopped parsley and red chili flakes if desired. Serve hot.
