  • 2 medium Zucchini firm, cubed
  • 1 cup Green Bell Pepper chopped
  • 1 medium Onion diced
  • 1 cup Grape Tomatoes halved
For the Seasoning and Coating
  • 1 tablespoon Italian Herb Blend
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Cracked Black Pepper
For the Cheese Topping
  • 2 cups Mozzarella Cheese shredded
For Roasting
  • 2 tablespoons Olive Oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375ºF (190ºC).
  2. In a baking dish, combine the cubed zucchini, chopped green bell pepper, diced onion, and halved grape tomatoes.
  3. Sprinkle with Italian herb blend and garlic powder, followed by half of the mozzarella cheese. Mix gently.
  4. Season with salt and cracked black pepper. Drizzle olive oil over the top and toss gently.
  5. Bake uncovered for 20 minutes.
  6. Remove from oven and add remaining mozzarella cheese on top. Return to the oven for another 10 minutes or until melted and golden.
  7. Garnish with chopped parsley and red chili flakes if desired. Serve hot.
