Step-by-Step Instructions for Chipotle Chicken Panini
  1. In a medium bowl, whisk together the egg yolk, Dijon mustard, lime juice, honey, salt, and pepper until smooth. Gradually add in the oil while continuously whisking until emulsified. Set aside.
  2. Season the chicken breast with salt and pepper. Grill in a skillet over medium heat for about 4-5 minutes on each side until browned and cooked through. Remove and slice.
  3. Butter the outer sides of the bread and spread chipotle mayo on the inner sides. Layer the grilled chicken, bacon, and cheddar cheese. Optionally add tomato or avocado.
  4. Grill the sandwich in the same skillet or a panini press for about 3-5 minutes on each side until golden brown and cheese is melted.
