Step-by-Step Instructions for Chipotle Chicken Panini
- In a medium bowl, whisk together the egg yolk, Dijon mustard, lime juice, honey, salt, and pepper until smooth. Gradually add in the oil while continuously whisking until emulsified. Set aside.
- Season the chicken breast with salt and pepper. Grill in a skillet over medium heat for about 4-5 minutes on each side until browned and cooked through. Remove and slice.
- Butter the outer sides of the bread and spread chipotle mayo on the inner sides. Layer the grilled chicken, bacon, and cheddar cheese. Optionally add tomato or avocado.
- Grill the sandwich in the same skillet or a panini press for about 3-5 minutes on each side until golden brown and cheese is melted.
- Slice the grilled panini in half for serving. Serve hot with extra chipotle mayo for dipping.
