Method
 

Cooking Instructions
  1. Prepare ingredients by cutting white fish into bite-sized chunks, mincing garlic, and grating ginger.
  2. In a large pan, heat a tablespoon of oil over medium heat. Add red curry paste, garlic, and ginger; sauté for 1-2 minutes.
  3. Add fish chunks to the pan and cook for 3-4 minutes, until they turn opaque.
  4. Pour in coconut milk, lime juice, and zest; season with salt and pepper. Simmer for 10-15 minutes.
  5. Rinse jasmine rice until water runs clear. Boil 2 cups of water, add rice, and simmer for 15-20 minutes.
  6. Serve rice topped with curry and garnish with cilantro and extra lime zest.
