Base
  • 1 cup Cottage Cheese full-fat or low-fat for best texture
  • 1/2 cup Peanut Butter or almond butter for a nutty flavor
  • 1/4 cup Maple Syrup honey can be substituted
  • 1 teaspoon Vanilla Extract or almond extract for a twist
Dry Ingredients
  • 1 scoop Protein Powder (chocolate) or vanilla protein powder
  • 1/4 cup Cocoa Powder or carob powder for a unique flavor
  • 1/2 cup Almond Flour or substitute with oat flour
  • 1/4 teaspoon Salt
Coating
  • 1/2 cup Chocolate Chips or dark chocolate chips
  • 1 tablespoon Coconut Oil or any neutral oil

Method
 

Preparation Steps
  1. In a food processor, combine cottage cheese, peanut butter, maple syrup, and vanilla extract. Blend on high for 30 seconds until smooth.
  2. Add protein powder, cocoa powder, almond flour, and salt to the mixture. Pulse for 15-20 seconds until a thick dough forms.
  3. Check the mixture's consistency. Add water if too dry; add almond flour if too wet. Mix briefly to achieve a play-dough-like texture.
  4. Scoop out 1 to 1.5 tablespoons of the dough and roll into a ball. Repeat until all dough is shaped into approximately 12 balls.
  5. Place the rolled balls on a parchment-lined plate and chill in the refrigerator for 30 minutes or in the freezer for 15 minutes.
  6. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring until smooth.
  7. Dip each chilled protein ball into the melted chocolate, allowing excess to drip off before placing back on parchment.
  8. Return the coated protein balls to the refrigerator for 5 minutes to allow the chocolate to harden.
