Preparation Steps
- In a food processor, combine cottage cheese, peanut butter, maple syrup, and vanilla extract. Blend on high for 30 seconds until smooth.
- Add protein powder, cocoa powder, almond flour, and salt to the mixture. Pulse for 15-20 seconds until a thick dough forms.
- Check the mixture's consistency. Add water if too dry; add almond flour if too wet. Mix briefly to achieve a play-dough-like texture.
- Scoop out 1 to 1.5 tablespoons of the dough and roll into a ball. Repeat until all dough is shaped into approximately 12 balls.
- Place the rolled balls on a parchment-lined plate and chill in the refrigerator for 30 minutes or in the freezer for 15 minutes.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring until smooth.
- Dip each chilled protein ball into the melted chocolate, allowing excess to drip off before placing back on parchment.
- Return the coated protein balls to the refrigerator for 5 minutes to allow the chocolate to harden.
