- Preheat your oven to 350°F (175°C) and prepare a standard loaf pan.
- Whisk together oat flour, baking powder, and cinnamon in a large bowl.
- Blend cottage cheese, eggs, maple syrup, and vanilla in another bowl until smooth.
- Gradually add dry mixture to wet ingredients, stirring gently until just combined.
- Combine cinnamon with maple syrup to create the cinnamon swirl.
- Pour half of the batter into the prepared loaf pan, sprinkle the cinnamon swirl, then pour remaining batter.
- Bake for 30–35 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack. Optional: drizzle with glaze.
