Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese, honey or maple syrup, vanilla extract, and the egg. Whisk until fully blended.
  3. In another bowl, whisk together the oats, baking powder, and optional cinnamon.
  4. Gradually fold the dry ingredients into the wet mixture, using a spatula to combine gently.
  5. Drop dollops of the cookie dough onto your prepared baking sheet, spacing about 2 inches apart.
  6. Bake for 12-15 minutes until lightly golden brown around the edges.
  7. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
