Step-by-Step Instructions

  2. Cook lasagna noodles according to package instructions until al dente. Lay flat on a towel to cool.
  3. In a bowl, mix ricotta cheese, spinach, minced garlic, oregano, salt, and pepper until blended.
  4. Layer a baking dish with pumpkin puree, noodles, ricotta mixture, and more pumpkin. Repeat layers, finishing with noodles and pumpkin.
  5. Bake uncovered for about 30 minutes until golden brown and bubbly.
