- Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes, then pierce them with a fork several times. Bake for 45-60 minutes until tender.
- Once cooked, slice each sweet potato in half lengthwise and scoop out most of the flesh into a mixing bowl.
- In the mixing bowl, add chopped apples, fresh cranberries, brown sugar, ground cinnamon, unsalted butter, and salt. Mix until chunky and well-combined.
- Spoon the cranberry-apple filling back into the sweet potato skins, packing lightly.
- Reduce oven temperature to 350°F (175°C) and bake the filled sweet potatoes for an additional 20-25 minutes.
