- Slice the chicken breasts horizontally into thinner cutlets and pound for even thickness.
- Combine olive oil, garlic, Italian seasoning, salt, and pepper in a bowl and marinate the chicken for 15-30 minutes.
- Sauté fresh spinach in a skillet for 2-3 minutes until wilted.
- Beat cream cheese until smooth and fold in sautéed spinach and half of the mozzarella.
- Optional: Sear the marinated chicken in a skillet for 2-3 minutes on each side until golden brown.
