Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
  2. Slice the chicken breasts horizontally into thinner cutlets and pound for even thickness.
  3. Combine olive oil, garlic, Italian seasoning, salt, and pepper in a bowl and marinate the chicken for 15-30 minutes.
  4. Sauté fresh spinach in a skillet for 2-3 minutes until wilted.
  5. Beat cream cheese until smooth and fold in sautéed spinach and half of the mozzarella.
  6. Optional: Sear the marinated chicken in a skillet for 2-3 minutes on each side until golden brown.
  7. Assemble by laying chicken in the baking dish and spreading the cream cheese mixture on top, followed by the remaining mozzarella.
  8. Bake the casserole for 20-30 minutes or until the cheese is bubbling and chicken reaches 165°F (75°C).
  9. Remove from oven and let rest for 5 minutes before serving.
