  • 1 cup coconut milk Opt for full-fat and chilled.
For Serving
  • 1/2 cup fresh strawberries For garnish.

Step-by-Step Instructions
  1. Boil 4 cups of water in a medium saucepan. Add sago pearls and cook for 15 minutes until transparent. Cover and let sit for 10–15 minutes.
  2. Strain the sago pearls and rinse with cold water. Soak in cold water for 5 minutes to prevent sticking.
  3. Blend 1 cup strawberries with evaporated milk and condensed milk until smooth. Chill the mixture.
  4. In a large bowl, combine strained sago and chilled coconut milk. Fold in the strawberry puree.
  5. Spoon the mixture into serving cups, garnish with fresh strawberry pieces and mint leaves, and serve chilled.
