- Boil 4 cups of water in a medium saucepan. Add sago pearls and cook for 15 minutes until transparent. Cover and let sit for 10–15 minutes.
- Strain the sago pearls and rinse with cold water. Soak in cold water for 5 minutes to prevent sticking.
- Blend 1 cup strawberries with evaporated milk and condensed milk until smooth. Chill the mixture.
- In a large bowl, combine strained sago and chilled coconut milk. Fold in the strawberry puree.
- Spoon the mixture into serving cups, garnish with fresh strawberry pieces and mint leaves, and serve chilled.
