Method
 

Step-by-Step Instructions
  1. Prepare the Pumpkin Mixture by finely grating the pumpkin, garlic, and onion. Allow to sit.
  2. Mix the grated pumpkin mixture with eggs, flour, cumin, salt, and pepper in a large bowl.
  3. Fry patties of the pumpkin mixture in hot oil for about 5-7 minutes on each side until golden brown.
  4. Cook seasoned chicken fillets in hot oil for approximately 5-7 minutes per side until cooked through.
  5. Plate the chicken over a bed of salad and place the crispy rösti alongside for serving.
  6. Garnish with spring onions, parsley, sunflower seeds, and serve with herb quark.
