Preparation Steps
  1. Season the chicken thigh with salt, pepper, red paprika seasoning, and garlic powder. Optionally, flatten the thigh for even cooking.
  2. In a shallow bowl, beat the egg until frothy. Dip the seasoned chicken into the egg, ensuring it is fully coated.
  3. Crush the cornflakes and mix them with additional spices. Coat the chicken evenly in this crunchy mixture.
  4. Preheat your air fryer to 380°F (190°C) for about 5 minutes.
  5. Place the coated chicken in the air fryer basket in a single layer and cook for 18 minutes, flipping halfway through.
  6. Slice the brioche bun in half and prepare your vegetable toppings.
  7. Spread spicy mayo on the bottom half of the brioche bun, add lettuce, and top with the crispy chicken. Finish with the other half of the bun.
