Ingredients
  

For the Chicken
  • 4 pieces Chicken Breasts Slice into thinner cutlets
  • 1 teaspoon Salt Fine sea salt recommended
  • 2 large Eggs Binding wash
  • 1/2 cup All-Purpose Flour For thickening the egg wash
For the Coating
  • 1 cup Panko Breadcrumbs For extra crunch
  • 1/2 cup Romano Cheese Can substitute with Parmesan
  • 1 tablespoon Fresh Oregano Fresh preferred
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper Freshly cracked preferred
For Cooking & Topping
  • 1/2 cup Olive Oil For frying
  • 1 cup Mozzarella Cheese Melty topping
  • 1 cup Monterey Jack Cheese Melty topping
For Garnish
  • 1/4 cup Fresh Parsley Optional garnish
  • 1 medium Lemon Cut into wedges for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Slice chicken breasts into thinner cutlets and season with fine sea salt.
  3. Zest one lemon and cut another into wedges.
  4. Whisk together eggs and flour in one bowl; combine breadcrumbs, cheese, oregano, lemon zest, garlic powder, and black pepper in another bowl.
  5. Dredge each chicken cutlet first in the egg wash, then coat with the breadcrumb mixture.
  6. Heat olive oil in a skillet and pan-sear chicken cutlets until golden brown.
  7. Transfer chicken to the baking sheet and top with combined mozzarella and Monterey Jack cheeses.
  8. Bake for 13-15 minutes until cheese is bubbly and chicken reaches 165°F (74°C).
  9. Remove from oven and squeeze lemon wedges over chicken, garnishing with parsley and lemon slices.
