Ingredients

For the Filling
  • 6 slices Bacon Adds savory crunch; swap for sausage or ham for variations.
  • 2 cups Potatoes Creates substance; any type works, even frozen for convenience.
  • 1 packet Taco Seasoning Mix Provides flavor and spice; consider making your own for a personalized touch.
  • 6 large Eggs Primary protein source; easily replaced with egg whites or plant-based options.
  • 1 cup Monterey Jack Cheese Offers creaminess; cheddar or pepper jack serve as alternatives.
For the Tacos
  • 8 pieces Corn Tortillas Serve as the base; feel free to switch to flour tortillas for a softer bite.
For Cooking
  • 2 tablespoons Canola Oil Used for cooking potatoes; olive oil is an excellent substitute.

Equipment

  • Oven
  • Skillet
  • Baking Sheet
  • Parchment Paper

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper.
  2. Place the bacon slices on the lined baking sheet and bake in the preheated oven for about 10 minutes, or until they turn crispy and golden.
  3. In a large skillet, heat a drizzle of canola oil over medium heat. Add cubed potatoes to the skillet, season with your taco seasoning mix, and sauté for 15-20 minutes until golden brown.
  4. As the potatoes cook, warm your corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  5. In the same skillet used for the potatoes, add a bit more oil if needed, and pour in the beaten eggs. Cook over medium-low heat for about 5-7 minutes.
  6. Place the warmed tortillas upright in a baking dish and fill each one with a layer of cooked potatoes, scrambled eggs, chopped bacon, and sprinkle with Monterey Jack cheese.
  7. Transfer the assembled tacos to the preheated oven and bake for 10 minutes.
  8. Once baked, allow the Baked Breakfast Tacos to cool for a few minutes before serving.
