Step-by-Step Instructions
  1. Cook the Tortellini: Boil salted water, add tortellini, and cook until they float, about 3-5 minutes. Drain and reserve a cup of pasta water.
  2. Prepare the Mushrooms and Sage: Slice mushrooms and chop sage. Heat olive oil and butter in a skillet.
  3. Crisp the Sage: Sauté chopped sage until crispy, about 1 minute. Remove and drain on paper towel.
  4. Sauté the Mushrooms and Garlic: Add mushrooms and minced garlic to the skillet. Sauté for about 5 minutes until browned.
  5. Combine Tortellini and Sauce: Add drained tortellini to the skillet with remaining butter and Parmesan. Toss gently.
