Method
 

Step-by-Step Instructions for Chicken Zucchini Bake
  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cubed chicken and cook for about 5–7 minutes until golden brown. Remove and set aside.
  3. In a mixing bowl, combine the sliced zucchinis and diced bell peppers. Add garlic powder, onion powder, oregano, basil, salt, black pepper, and the remaining olive oil. Toss until evenly coated.
  4. Spread half of the vegetable mixture at the bottom of a greased baking dish.
  5. Layer the browned chicken over the vegetables. Pour marinara sauce over the chicken, spreading evenly.
  6. Add the remaining vegetable mixture on top of the chicken and sauce.
  7. Sprinkle mozzarella and Parmesan cheese evenly over the top.
  8. Cover with aluminum foil and bake for about 20 minutes. Remove the foil and bake for an additional 10–15 minutes until cheese is golden and bubbly.
  9. Allow to rest for about 5 minutes before serving.
