Step-by-Step Instructions
  1. Soak the pitted Medjool dates in hot water for about 10 minutes, then drain.
  2. Blend dates, almond butter, pecans, vanilla extract, chia seeds, cocoa powder, and salt in a food processor until thick and sticky.
  3. If too dry, add water gradually while blending until a thick dough forms.
  4. Chill the mixture in a bowl covered with plastic wrap for about 1 hour.
  5. Roll the chilled mixture into 20 bite-sized balls, about one inch in diameter.
  6. Store the bites in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
