  • 1 cup Coconut Milk Light coconut milk is less rich.
  • 1 tbsp Maple Syrup Honey can be used for non-vegans.
  • 1 tsp Paprika Smoked paprika adds extra flavor.
  • 2 medium Limes Lemon can be substituted with caution.
For Garnish
  • ¼ cup Cilantro Parsley can be an alternative.

Method
 

Step-by-Step Instructions
  1. Cook jasmine rice according to package instructions, typically 15 minutes.
  2. Preheat oven to 400°F (200°C). Drain and press tofu, then cut into cubes.
  3. Toss tofu cubes with avocado oil, soy sauce, and cornstarch. Spread on baking sheet.
  4. Bake tofu for 20 minutes, flipping halfway through.
  5. Sauté shallots, ginger, and garlic in remaining avocado oil for 1-2 minutes.
  6. Add coconut milk, soy sauce, maple syrup, and paprika. Stir and heat through.
  7. Add baked tofu to sauce and mix in lime juice. Serve over rice and garnish with cilantro.
