- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for about 2 minutes.
- Add the ground turkey, breaking it apart with a spatula while it cooks for 5 to 6 minutes until browned.
- Stir in the diced tomatoes, dried Italian herbs, salt, and pepper, allowing it to simmer for about 3 to 4 minutes.
- Layer half of the zucchini in the baking dish, then half of the turkey mixture, followed by half of the mozzarella. Repeat these layers.
- Bake uncovered for 30 to 35 minutes until bubbly and cheese is golden.
