Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with olive oil.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing for about 2 minutes.
  3. Add the ground turkey, breaking it apart with a spatula while it cooks for 5 to 6 minutes until browned.
  4. Stir in the diced tomatoes, dried Italian herbs, salt, and pepper, allowing it to simmer for about 3 to 4 minutes.
  5. Layer half of the zucchini in the baking dish, then half of the turkey mixture, followed by half of the mozzarella. Repeat these layers.
  6. Bake uncovered for 30 to 35 minutes until bubbly and cheese is golden.
  7. Allow to cool for 5 minutes before serving warm with your chosen side.
