  • 1 medium Zucchini can substitute with asparagus
  • 1 medium Squash
  • 2 cloves Garlic minced, fresh is best
  • 1 cup Cherry Tomatoes halved
For the Seasoning
  • 1 teaspoon Italian Seasoning can substitute with dried oregano or basil
  • 1 teaspoon Salt to taste
For the Finishing Touches
  • 1/2 cup Parmesan Cheese omit for vegan option
  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 2 tablespoons Lemon Juice can substitute with vinegar

Method
 

Preparation Steps
  1. Boil a large pot of salted water; add penne pasta and cook until al dente, saving 1/2 cup of pasta water before draining.
  2. Heat olive oil in a skillet over medium-high heat. Sauté red onion and carrot for about 2 minutes until softened.
  3. Add broccoli and bell pepper; sauté for another 2 minutes until the broccoli is bright green.
  4. Mix in zucchini, squash, garlic, and tomatoes. Cook for 2-3 minutes until fragrant.
  5. Combine the drained pasta with the sautéed vegetables, tossing to mix well.
  6. Drizzle with lemon juice and gradually add reserved pasta water to achieve desired sauce consistency.
  7. Finish with Parmesan cheese and parsley, tossing gently until combined.
  8. Serve immediately with additional Parmesan if desired.
