  • 2 cups Corn Kernels Drained, fresh or canned
  • ½ cup Red Pepper Diced
  • ½ cup Green Pepper Diced
  • ¼ cup Cilantro Chopped
  • 1 whole Jalapeño Chopped, to taste
  • ½ cup Cotija Cheese Crumbled
  • ½ cup Greek Yogurt Or sour cream
For the Dressing
  • ¼ cup Mayonnaise Light version if desired
  • 1 whole Lime Juice and zest
  • 2 cloves Garlic Minced
Optional Add-Ins
  • 1 whole Avocado Diced, optional

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine Greek yogurt, mayonnaise, minced garlic, lime juice and zest, and a pinch of salt and pepper. Whisk until smooth and set aside.
  2. In a large mixing bowl, combine drained corn, diced red and green peppers, chopped cilantro, and chopped jalapeño. Add shredded rotisserie chicken and crumbled cotija cheese. Toss gently.
  3. Pour the dressing over the salad mixture. Fold gently until everything is coated.
  4. If using avocado, add diced pieces gently to avoid mashing.
  5. Sprinkle Tajin seasoning over the salad and toss gently. Serve immediately or refrigerate for 30 minutes.
