- In a medium-sized airtight container, add your ube halaya or ube extract, followed by coconut milk and your choice of plant milk. Toss in the chia seeds, sweetener, and, if using, vanilla extract. Stir everything together until smooth and well combined.
- Once the base is mixed, slowly stir in the rolled oats until each oat is thoroughly coated. Ensure that there are no dry patches of oats.
- Cover the container tightly and place it in the refrigerator, allowing the oats to soak for at least 6 hours or overnight.
- When ready to enjoy, stir the mixture and add extra milk if desired. Top with coconut shreds, fresh fruit, or nuts before serving.
