Ingredients
  

For the Dumplings
  • 2 cups Flour can use unbleached all-purpose or a gluten-free blend
  • 1 tbsp Baking Powder avoid baking soda
  • 1 tsp Salt
  • cup Canned Coconut Milk or melted vegan butter
  • ¾ cup Warm Water
For the Stew
  • 4 cups Vegetable Broth such as Better Than Bouillon Roasted Vegetable Base
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 1 cup Crimini Mushrooms chopped
  • 1 cup Spinach
  • 15 oz Butter Beans canned
  • ¾ tsp Dried Italian Herbs
  • ½ tsp Smoked Paprika
  • cup Canned Coconut Milk

Method
 

Preparation
  1. In a mixing bowl, combine flour, baking powder, and salt. Make a well in the center and add coconut milk and warm water. Mix until a sticky dough forms and set aside to rest.
  2. Heat a large pot over medium-high heat, adding water to sauté. Add onions, carrots, and celery, stirring for 3-4 minutes until onions are translucent, then add garlic for an additional minute.
  3. Add dried Italian herbs and smoked paprika; pour in vegetable broth. Bring to a boil.
  4. Carefully drop spoonfuls of dumpling dough into the boiling broth, leaving space between them.
  5. Cover and reduce heat to medium-low, simmer for 10-12 minutes until dumplings are fluffy.
  6. Stir in spinach and remaining coconut milk just before serving, allowing spinach to wilt.
