Step-by-Step Instructions
  1. In a large mixing bowl, whisk together olive oil, minced garlic, apple cider vinegar, soy sauce, smoked paprika, dried thyme, dried rosemary, dried oregano, salt, and black pepper.
  2. Coat the chicken thighs generously in the marinade and refrigerate for at least 1 hour, ideally overnight.
  3. Preheat your grill to medium heat, aiming for a range of 350°F to 400°F.
  4. Remove the chicken from the refrigerator and let sit at room temperature for 15-20 minutes before grilling.
  5. Place the marinated chicken thighs skin-side down on the grill and grill for about 10-15 minutes until golden brown.
  6. Flip the thighs and continue grilling for another 15-20 minutes until the internal temperature reaches 165°F.
  7. Check the internal temperature at the thickest part of the thighs to ensure they are cooked through.
  8. Remove the chicken from the grill and let rest for about 5 minutes before serving.
