  • 0.5 teaspoon baking soda Ensure it's fresh
  • 1 teaspoon cinnamon Can substitute with pumpkin pie spice
  • 0.25 teaspoon nutmeg Optional but enhances flavor
  • 0.5 teaspoon salt Balances sweetness

  • 0.5 cups vegan chocolate chips Can be omitted or substituted with nuts

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. In a large bowl, mash the bananas, then whisk in coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar.
  3. Gradually add oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt to the wet mixture. Stir until just combined.
  4. Fold in vegan chocolate chips and chopped walnuts into the batter.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for 60-65 minutes, until top is golden brown and a toothpick comes out clean.
  7. Allow to cool in the pan for 15 minutes, then transfer to a wire rack.
  8. Once cooled, slice and serve.
