- Preheat your oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, mash the bananas, then whisk in coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar.
- Gradually add oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt to the wet mixture. Stir until just combined.
- Fold in vegan chocolate chips and chopped walnuts into the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 60-65 minutes, until top is golden brown and a toothpick comes out clean.
- Allow to cool in the pan for 15 minutes, then transfer to a wire rack.
- Once cooled, slice and serve.
