  • 1 can black beans can swap with pinto beans
  • 1 cup corn use frozen or canned
  • 1 cup diced tomatoes use fresh or canned versions
  • 2 cups shredded lettuce substitute with spinach if desired
For Toppings
  • 1 cup shredded cheddar cheese mozzarella or vegan cheese are alternatives
  • 1 cup salsa customize heat level to your preference
  • 1 bunch fresh cilantro optional garnish
  • 2 pieces lime wedges to add brightness

Method
 

Cooking Steps
  1. Rinse the rice until the water runs clear. Combine with water or broth and a pinch of salt. Bring to boil, cover, and simmer for 15-20 minutes.
  2. Heat a skillet, add ground meat, and cook until browned. Mix in taco seasoning and a splash of water.
  3. Heat black beans in a small pot with cumin and garlic for about 5 minutes.
  4. Once rice is cooked, fluff and combine with ground meat in a large bowl.
  5. Layer rice and meat mixture into bowls, adding black beans, lettuce, tomatoes, and cheese.
  6. Finish with fresh lime juice, salsa, and cilantro.
