- Preheat the oven to 350°F (175°C).
- In a food processor, pulse the graham crackers until finely crushed. Combine with granulated sugar, melted butter, and vanilla in a mixing bowl.
- Press the crumb mixture into the bottom and slightly up the sides of your baking dish.

- Add eggs one at a time, mixing on low speed until combined.
- Pour the filling over the prepared crust and smooth the top with a spatula.
- Bake for 22-25 minutes until the center jiggles slightly.
- Turn off the oven, crack the door open, and cool cheesecake for 45-60 minutes.
- Transfer to the refrigerator and chill for at least 4 hours, preferably overnight.
