- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the lean ground beef for about 5-7 minutes until fully browned, then drain excess grease.
- Stir in the chunky salsa into the cooked beef and simmer for an additional 3-4 minutes.
- Spread a thin layer of red enchilada sauce on the bottom of your baking dish.
- Spoon about 2 tablespoons of the beef mixture into each tortilla, sprinkle cheese on top, then roll tightly and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with remaining cheese.
- Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
- Allow to cool for a few minutes before serving.
