  • 1 pound Lean Ground Beef or ground turkey or shredded beef
  • 1 cup Chunky Salsa mild or medium variety
For Assembly
  • 1 can (10-ounce) Red Enchilada Sauce or green enchilada sauce
  • 8 pieces Tortillas (8-inch) flour or corn tortillas
For Topping
  • 8 ounces Borden® Thick Cut Shredded Four Cheese Mexican or any blend of Mexican cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the lean ground beef for about 5-7 minutes until fully browned, then drain excess grease.
  3. Stir in the chunky salsa into the cooked beef and simmer for an additional 3-4 minutes.
  4. Spread a thin layer of red enchilada sauce on the bottom of your baking dish.
  5. Spoon about 2 tablespoons of the beef mixture into each tortilla, sprinkle cheese on top, then roll tightly and place seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with remaining cheese.
  7. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
  8. Allow to cool for a few minutes before serving.
