Step-by-Step Instructions
  1. Start by thinly slicing the red pepper and onion. Heat a skillet over medium-high heat, adding a tablespoon of oil. Once the oil shimmers, add the sliced vegetables seasoned with salt and pepper. Sauté for about 5-7 minutes until the veggies are softened and vibrant in color, then transfer them to a bowl and set aside.
  2. Using a sharp knife, take three small tortillas and carefully cut out spooky faces from each one. Aim for eerie shapes like eyes and mouths that will peek through when the quesadillas are cooked.
  3. On three of the un-cut tortillas, layer a generous portion of the sautéed veggies, followed by an even sprinkle of mozzarella and cheddar cheese. Add a spoonful of salsa on top.
  4. Top the assembled tortillas with the spooky face tortillas you cut earlier, pressing down gently to secure them.
  5. Heat the skillet again on medium and add a light coating of cooking spray or a small amount of oil. Carefully place the prepared quesadillas in the skillet and cook for approximately 7-10 minutes. Flip them halfway through.
