Method
 

Preparation Steps
  1. Wash and dry the cucumber and carrots. Use a sharp knife or julienne peeler to slice them into thin strips or shreds.
  2. In a small mixing bowl, whisk together olive oil, lemon juice, gochugaru, soy sauce, and sugar until smooth.
  3. In a large bowl, combine julienned cucumber, carrots, parsley (or cilantro), and minced garlic.
  4. Pour the dressing over the salad ingredients and toss gently to coat.
  5. Sprinkle sesame seeds on top, and allow the salad to rest for about 10 minutes.
  6. Toss the salad one final time before serving, and enjoy!
