Preparation Steps
- Wash and dry the cucumber and carrots. Use a sharp knife or julienne peeler to slice them into thin strips or shreds.
- In a small mixing bowl, whisk together olive oil, lemon juice, gochugaru, soy sauce, and sugar until smooth.
- In a large bowl, combine julienned cucumber, carrots, parsley (or cilantro), and minced garlic.
- Pour the dressing over the salad ingredients and toss gently to coat.
- Sprinkle sesame seeds on top, and allow the salad to rest for about 10 minutes.
- Toss the salad one final time before serving, and enjoy!
