Step-by-Step Instructions for Fried Enoki Mushroom
- Begin by carefully trimming the base of the enoki mushrooms, removing any dirt and ensuring they are fresh. Next, slice the mushrooms vertically into 1/4 inch pieces.
- In a heavy-bottomed pot, pour in 2-3 inches of neutral oil and heat it to 375°F (190°C) over medium-high heat.
- In a large mixing bowl, whisk together all-purpose flour, potato starch, baking powder, salt, white pepper, garlic powder, paprika, cayenne pepper, and five-spice powder. Gradually blend in cold sparkling water until you achieve a smooth batter.
- Take each bunch of sliced enoki mushrooms and dip them into the batter, ensuring they are fully coated. Allow any excess batter to drip off.
- Once the oil has reached the optimum temperature, gently place the battered mushrooms into the hot oil. Fry them for about 1-2 minutes until golden brown and crispy.
- Carefully remove the fried enoki mushrooms using a slotted spoon and place them on a wire rack to cool briefly. Season with salt and serve with your choice of dipping sauces.
