Step-by-Step Instructions for Fried Enoki Mushroom
  1. Begin by carefully trimming the base of the enoki mushrooms, removing any dirt and ensuring they are fresh. Next, slice the mushrooms vertically into 1/4 inch pieces.
  2. In a heavy-bottomed pot, pour in 2-3 inches of neutral oil and heat it to 375°F (190°C) over medium-high heat.
  3. In a large mixing bowl, whisk together all-purpose flour, potato starch, baking powder, salt, white pepper, garlic powder, paprika, cayenne pepper, and five-spice powder. Gradually blend in cold sparkling water until you achieve a smooth batter.
  4. Take each bunch of sliced enoki mushrooms and dip them into the batter, ensuring they are fully coated. Allow any excess batter to drip off.
  5. Once the oil has reached the optimum temperature, gently place the battered mushrooms into the hot oil. Fry them for about 1-2 minutes until golden brown and crispy.
  6. Carefully remove the fried enoki mushrooms using a slotted spoon and place them on a wire rack to cool briefly. Season with salt and serve with your choice of dipping sauces.
