Cooking Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with aluminum foil.
- Slice fresh lemons into thin rounds and arrange them evenly on the prepared baking sheet.
- Pat the salmon fillets dry with a paper towel and place them skin-side down on the lemon slices.
- In a small bowl, combine olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper and whisk well.
- Brush the marinade over the salmon fillets, letting some drizzle onto the lemon slices.
- Roast in the preheated oven for approximately 12-15 minutes until salmon reaches 130-135°F (54-57°C).
- Remove from the oven and let rest for a few minutes before garnishing with fresh parsley.
