Preparation Steps
  1. Wash baby potatoes under cold water, halve them, and place in the bottom of the slow cooker.
  2. Mince the garlic cloves finely and set aside.
  3. Rub chicken breasts with olive oil, sprinkle with Italian seasoning, salt, black pepper, and red pepper flakes if desired.
  4. Layer the seasoned chicken over the halved potatoes in the slow cooker.
  5. Pour chicken broth over the chicken and potatoes to coat.
  6. Sprinkle minced garlic over the chicken and top with grated parmesan cheese.
  7. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours until chicken reaches 165°F and potatoes are fork-tender.
  8. Once cooked, serve with fresh parsley on top.
