Step-by-Step Instructions
  1. Start by thoroughly rinsing the squid under cold water to remove any grit. Carefully slice the squid body into strips while keeping the tentacles intact for presentation.
  2. In a mixing bowl, combine the cleaned squid with olive oil, sea salt, and freshly ground black pepper. Toss gently to ensure each piece is coated evenly. Allow to marinate for about 10 minutes.
  3. Preheat your grill or cast iron skillet over high heat until it is scorching hot—around 450°F to 500°F.
  4. Carefully place the marinated squid onto the grill, laying it flat to ensure even cooking. Grill for 3-5 minutes on each side.
  5. While the squid is grilling, mix together the minced garlic, chopped parsley, and breadcrumbs in a separate bowl.
  6. Once the squid is done grilling, sprinkle the garlic, parsley, and breadcrumb mixture over the top. Cook for an additional 2-3 minutes.
  7. Remove the grilled squid from the heat and drizzle with olive oil and vinegar. Garnish with fresh thyme and serve immediately.
