Step-by-Step Instructions
  1. Prepare your ingredients by mincing garlic and chopping shallots. Season the chicken fillets with salt, pepper, garlic powder, and sweet paprika.
  2. Heat olive oil and butter in a skillet over medium heat. Cook the chicken fillets for about 5 minutes on each side until browned and cooked through. Remove and keep warm.
  3. In the same skillet, sauté the minced garlic and chopped shallots for about 2 minutes until tender and fragrant.
  4. Deglaze the pan by pouring in dry white wine, scraping the browned bits. Simmer for 2 minutes.
  5. Stir in tomato paste, dried basil, salt, and pepper to taste; cook for 1 minute.
  6. Add chicken broth and cherry tomatoes, bring to a gentle boil, then reduce heat and simmer for 5 minutes.
  7. Nestle the chicken back into the sauce, sprinkle with chopped basil and mozzarella, cover and simmer for an additional 5 minutes.
  8. Serve hot, optionally with pasta or salad, garnished with additional basil and grated Parmesan.
