  • 4 pieces Boneless Skinless Chicken Breasts or thighs for extra juiciness

  • 1/2 teaspoon Cayenne Pepper omit for milder taste
  • 1/2 cup Buffalo Wing Sauce store-bought or homemade
  • 1 tablespoon Honey or agave syrup
  • 4 pieces Brioche Buns or ciabatta/gluten-free options
  • 1 large Tomato any variety
  • 4 slices Cheese Slices (Havarti or Pepper Jack) blue cheese or sharp cheddar for variety
For the Grinder Slaw
  • 2 cups Shredded Iceberg Lettuce or romaine
  • 1/2 medium Red Onion or green onions
  • 1/2 cup Pepperoncini omit for less heat
  • 1/2 cup Mayonnaise or Greek yogurt
  • 2 tablespoons Red Wine Vinegar or white vinegar
  • 1 teaspoon Dried Dill or fresh herbs
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano or fresh oregano

Method
 

Preparation & Cooking Steps
  1. Pound the chicken breasts to an even thickness of about 1-inch for even cooking.
  2. In a bowl, whisk together olive oil, kosher salt, paprika, garlic powder, onion powder, cayenne pepper, buffalo sauce, and honey. Marinate chicken for at least 1 hour.
  3. Preheat the grill to medium-high, lightly oil the grates, and grill chicken for 5-6 minutes per side until cooked through.
  4. Add cheese slices on top of chicken during the last few minutes of grilling to melt.
  5. Toast brioche buns on the grill until golden, then assemble sandwiches with grilled chicken, grinder slaw, and tomato.
