- Pound the chicken breasts to an even thickness of about 1-inch for even cooking.
- In a bowl, whisk together olive oil, kosher salt, paprika, garlic powder, onion powder, cayenne pepper, buffalo sauce, and honey. Marinate chicken for at least 1 hour.
- Preheat the grill to medium-high, lightly oil the grates, and grill chicken for 5-6 minutes per side until cooked through.
- Add cheese slices on top of chicken during the last few minutes of grilling to melt.
- Toast brioche buns on the grill until golden, then assemble sandwiches with grilled chicken, grinder slaw, and tomato.
