- Preheat your grill for indirect heat cooking to 250°F for about 10-15 minutes.
- Pierce each sweet potato with a knife several times and rub generously with kosher salt. Wrap in foil.
- Place the foil-wrapped potatoes on the grill away from direct flames and cook for approximately 50-60 minutes.
- After an hour, increase the grill temperature to 400°F, unwrap the potatoes, and grill for another 15-25 minutes.
- Check for doneness by inserting a fork or knife into the thickest part. Continue grilling if not tender.
- Remove from the grill, let cool slightly, slice open and add butter, salt, and chopped chives.
