- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet, heat olive oil over medium heat and cook ground beef for 5–7 minutes until browned.
- Add onion and garlic to the skillet, sauté for 3–4 minutes until onions are soft.
- Transfer beef mixture to the baking dish and layer thinly sliced potatoes on top.
- Sprinkle cheese over potatoes, then pour beef broth around the edges.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 15–20 minutes until potatoes are tender and cheese is golden brown.
- Garnish with parsley before serving.
